Turn the bike on, turn the lights on, the rear light is on.
Pull the breaks, nothing happens.
Now, I have recently pulled the stock bulb and replaced it all with an LED array - and I installed 2 of them. One that will be one at all times (a direct bulb replacement) and the second set I want to come on when the breaks are on... like a break light in a car.
Question: Is there something out there already that will allow me to do that - a special switch or something that is easy to install and use?

You just need a Normally Closed push-button switch that's released when the brake lever is pulled.
I assume the wiring is the same as the XB-600. You probably already have the switches in place.
According to the XB-600 wiring diagram, there are "Normally-Open" switches on each "break" connected to the rear light unit through contact 6 of the 6-way connector (no wire color given). There is probably a switch at each brake lever.
There's a three-wire run from the controller that energizes the light circuit from the yellow wire in contact 1 of a 3-way connector, and carries sense information on brake activation back to the controller (no power when brakes are on) on contact 2 and 3 of the same connector.
Trace and test. The VOM is your friend.
