Ok, thinking out loud here.
If your set up is an open loop controlled 3 phase motor wired in Delta, it should be pretty easy.
A 3 pole 2 poition switch capable of the expected current could go in between the controller and the motor. I one switch position, wired as is. In the other (reverse) swap 2 motor phases.
This will give you reverse as fast as forward.
Maybe, if your motor is low enough power, you could put 3 high power resistors in each phase on the reverse circuit.
Or use a 4 pole switch, route the throttle wire through the extra pole and ad a resistor in the reverse position to limit max reverse throttle.
Again, just thinking out loud. I don't know your specific application and any or all of the above might be dangerous fro you to use.
