Since wiring the stock dc/dc converter off a 48v or 60v battery tap will unbalance the batteries on my XB-600. I thought of getting a 72v dc/dc converter since I am now running 6 sla batteries at 72v. Anyone know of a good inexpensive option?

A DC converter rated for 36V-72V is NOT intended for use with a 72V nominal pack, which at full charge will be at a voltage higher than 72V.
Also, that converter is not an isolated type
You would have to be powering a ton of things from the DC converter for it to really be capable of unbalancing your pack. Just look at the rated input current of the one you intend to use.
What do you mean by isolated type. I'm not sure what that means. Are we sure that it can't handle the hot 84v charge of 6 sla batteries.
If it is not a problem with unbalancing the batteries then I will just stick with the stock dc converter running on 5 sla's batteries.
like I said b4, if u are running the converter off of your 5x20ah batteries and only using the 18ah for the controller/motor, you should be fine. I think the little that the lights etc. will take from those 20ah batteries just may keep them pretty well balanced. As before, I would ALWAYS occasionally check battery balance.

I have an AC adapter for a sirius radio that reads 100v-240v input and 12v at 2.5amps output so 25watts total. Would that be enough to use this as a dc/dc converter for the xb-600 or will it draw more than 2.5amp with lights running?
